Cauliflower ‘Rice’
Today marks the end of my 10 day Keto-Kickstart. I was tempted to keep going because the rapid weight loss is very addictive, but I frankly love food too much! Keto is great for a boost, but I reckon it’s pretty difficult for a vegan to maintain. So I’ll enjoy the stone I’ve lost, and now move on to a more interesting and varied diet. (Carbs….I’m coming to get you…!!!).
However, I was loyal to the end, so this cauli-rice was my final keto-meal (until the next time).
It’s actually a lovely alternative to ‘real’ rice, and would be a delicious side-dish to accompany a curry. Even if you don’t particularly like cauliflower I’d urge you to give it a shot .
Recipe
1 head cauliflower
flavourless oil
1 red onion
1/2 red pepper
handful green beans/ mangetout
handful mushrooms
1-2 tsp powdered vegan chicken stock
1tsp curry powder
chilli flakes (optional)
salt and pepper
fresh coriander
- Start by processing the cauliflower till it resembles rice, then set aside.
- Fry off the onions, peppers, beans and mushrooms till cooked through, then add the garlic and warm it all up.
- Add the cauliflower, curry powder, stock powder and seasoning, and cook for around 8-10mins till it has absorbed all the flavours.
- Sprinkle with coriander and the chilli flakes, and enjoy!
Easy-peasy, and mega low carb, and low calorie. Win Win!
