Leftover Chips Waffles

I know, I know – leftover chips? Is that even a thing? Not usually in my house, but I bought a fairly large bag of frozen oven chips to make Dirty Fries the other day, and found I had no space in my freezer for what was left.

I cooked the lot, and then wondered what on earth to do with the ones I didn’t need. Let’s be honest, cooked fridge chips are pretty grim, and although I know they can be reheated quite successfully in all sorts of clever ways, I just didn’t fancy chips (who even am I nowadays?!). I also hate wasting food, so after rummaging around in my fridge to see what I could rustle up, I came up with this little beauty.

I’d really urge you to give this recipe a go – it’s so easy, and so delicious – plus anything cooked in a waffle iron gets extra Brownie points for gorgeousness. The recipe, as always is completely flexible – I used what I had at hand, but swap the cheese for something less spicy, change the onion and garlic powder out for some Cajun seasoning, add grated carrots maybe, or some chopped spinach would be good too. Play around with it, I think it would be hard to mess this up!

Recipe

30g leftover, cooked oven chips

1 flax ‘egg’

70g Mexicana Vegan cheese

1tsp garlic powder

1tsp onion powder

chives

salt & pepper

spray oil

  • Make your flax ‘egg’ around 15mins before you prepare the rest of the ingredients. Use 1 Tbs flaxseed and mix with 2-3Tbs water. set aside and let it become gloopy.
  • Roughly chop the cooked chips & chives, and place in a large mixing bowl.
  • Apart from the spray oil add all the other ingredients (including the flax egg).
  • Mash everything together with a potato masher, then start waffling!
  • Spray your waffle iron with a little oil to make sure nothing sticks, and pile up the mixture relatively thickly – make sure it is even all over.
  • Once cooked, remove carefully with a spatula as the waffles will still be slightly delicate at this stage, but after a few seconds away from the heat they become crispy and can be picked up without fear of them disintegrating.

They would be lovely with baked beans and tofu scramble for breakfast, Or just dipped in some ketchup as a snack.
